Baking up some yumminess!

I went to a family birthday celebration this weekend and I had baked some Oatmeal Molasses Bread for the birthday man. πŸ™‚ He loved it. Which is pretty awesome!

Then tonight, I had a bit of an itch. An itch to bake. I turned to my trusty toaster oven and asked him what he would like. He in turn replied “Almond Muffins, please.” (Yes, my oven is very polite.)

So I complied.

And I baked up some Almond & Raisin muffins (without any sweetener added). I’ve been playing with this baking with almond flour business. So far? I’ve been LOVING it. Granted I don’t think I could ever adapt a fully Gluten-Free or Paleo lifestyle. But I feel its beneficial to expand my horizons (especially with food & nutrition) and experiment with new things.

Why not, right? You’ve only got this one life. You gotta make it really count. πŸ˜‰

I have to say, my tastebuds are plenty pleased.

I think this makes me feel much better about something I did (or rather didn’t do) this past friday. I had baked all the goodies for a bake sale, which included several types of cupcakes (both regular & mini), peanut butter chocolate chip cookies (which is the first time I’ve EVER made cookies by myself), and triple chocolate brownies.

Guess what?

I didn’t take a single picture.

Damn it.

I made to make all of these things in one night because I had a morning class Friday and the bake sale was going to be right after my class. Which meant I was elbow deep in mixing and baking. Oh, and of course screwing up because I botched the first batch of cookies.

Oh well.

I’m sad that I didn’t take any pictures. However, I’m very proud of myself for having baked all those goodies independently for the bake sale.

Yay. Go me. πŸ™‚

Carb-licious

Just baked bread! Annnd forgot to take a picture, yet again before digging into it.

This is not cool. I really need to remember to photograph my creations (aha..) before taking a chunk of it. Or allowing my mom to attack it.

Oh well. At least I made it.

All hail the oat.

Oaty oaty oaty!

Lookie what I made!

When I got home tonight I had the itching to bake. So what’s a girl to do?

I scratched it!

I scratched it pretty hard. With someΒ Cinnamon & Raisin Oatmeal Muffins.

I used:

  • 1 cup of rolled oats (which I ground up slightly in a food processor)
  • 1 cup of whole wheat flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp cinnamon (Probably? Didn’t measure because I love cinnamon)
  • 1/4 tsp nutmeg
  • 1/2 cup raisins (soaked in hot water, prior)
  • 1 rounded tbsp applesauce
  • 1 cup of buttermilk (almost 1 cup of almond milk mixed with 1 tbsp vinegar)

I just mixed the dry well, and incorporated the wet! Scooped into a oiled muffin pan, shoved it in a pre-heated oven at 350 degrees for about 18-20 minutes. Et viola!

Sadly mom got to one before I could take a picture. Poor muffin, never got its 15 seconds of fame.
